Montana, this wheat is lighter than traditional whole wheat flour but has all the fiber of whole wheat. There is no bitterness or "grassy" flavor that some find objectionable in whole wheat breads. Prairie Gold is a premium hard white spring wheat with high (16%) protein level, producing nutritious breads light in color and texture. Sweet, honey-like flavor. Good for biscuits, pancakes, muffins & in bread machines. Sold in 1-lb. quantities
